Vegan Dark Chocolate Cherry Cookies
2 ½ cups blanched almond flour
¼ cup
unsweetened special dark cacao powder
½ teaspoon sea
salt
½ teaspoon
baking soda
½ cup vegan oil shortening
¼ cup organic
local honey
½ cup enjoy
life chocolate chips
½ cup unsweetened coconut flakes
½ cup dried cherries
Blend the shortening and honey separate until it's creamy
You can find no sugar added dried cherries, but this is what I chose to use
Whisk all the ingredients until they clump and can roll into balls.
Place each spoonfull onto a sheetpan and press down flat.
Bake on 350 for 10-12 min.
