Apple Pie Bites

Apple Pie Bites
Lots of hands make for light work
Ingredients
2 cups Almond meal
1/2 cup Vegan shortening or Coconut oil
1 cup crushed walnuts
1/4 cup local honey
5 Apples (diced small)
2 tsp cinnamon
1 tsp nutmeg
2 Tbsp arrowroot powder
1/4 cup lemon juice
1 tsp. baking soda
2 eggs
 
  1. Saute diced apples with 1 Tbsp of the shortening. Add lemon juice, arrowroot powder and spices.
  2. Mix in a separate bowl the flour,honey,walnuts, 2 eggs and the rest of the vegan shortening.
  3. Press the dough into greased mini muffin tins.
  4. Bake on 350 for 5 minutes.
  5. Fill each pie crust with a tablespoon full of the apple filling and press it down a bit.
  6. Finish baking for 8 minutes or until it bubbles around the edges.

TIPTake the pies out and flip upside down onto a plate or board and hit the bottoms so that they fall out . Lift the tin off slowly.
